Freshly fried corn tortilla chips are crispy, salty, and ready to be harnessed as a vehicle for a generous mound of shredded cheese, a warm, stringy cold hickory-smoked Wisconsin mozzarella.  Proteins such as chili-braised brisket, mojo or chipotle shredded pork, tequila-marinated chicken, or chorizo-spiced tempeh bring umami, heft, spice, and sustenance.  We add a house-made queso for ooziness, and layer chips, cheese, protein and queso for maximum coverage and bake in a heavy black steel pan until melty, cheesy goodness is achieved...  Now comes the pico -- bold.  bright. fleshy.  Pickled red onions and jalapeños bring a racy acidity and heat to the game, and to cool it off, a squeeze of crema for coolness, creaminess, and relief.
